Recipe: Chive Hasselback Potatoes

There's nothing better than spending time with family this long weekend and cooking up some comfort food. We love potatoes and so a hot skillet of chive Hasselback potatoes was a no brainer!

Chive Hasselback Potatoes

Prep Time: 15 minutes Cook Time: 40 minutes Total Time: 55 minutes

Ingredients:

2 cups of baby potatoes

1/4 of diced chives

2 tbsp of olive oil

1 tbsp of dried oregano

salt & pepper to taste

Optional:

2 tbsp of Greek yogurt

1 tbsp of butter

Instructions:

1) Wash baby potatoes and thinly slice (being careful not to cut all the way through).

2) Place in a skillet with olive oil, oregano, salt and pepper. Mix well and place in oven at 400 F degrees.

3) Cook until fork tender and sprinkle fresh chives over the potatoes. Optional - feel free to drizzle with yogurt and butter.

4) Serve and enjoy!
