Recipe: Roasted Fennel

Sometimes one of the best ways to eat vegetables is with a little olive oil, salt and pepper. Raw fennel has a very distinct flavour but when it gets roasted the flavour mellows into a delicious caramelized taste. For even more depth of flavour, sprinkle a little Parmesan on top while it's still hot from the oven!

Roasted Fennel

Prep Time: 10 minutes Cook Time: 40 minutes Total Time: 50 minutes


2 fennel bulbs

2 tbsp of olive oil

large pinch of salt & pepper

Optional: large pinch of Parmesan


1) Rinse and slice fennel bulbs into half-inch pieces. Save the top sprigs for garnish.

2) Roast for 40 minutes on 350F. Stir several times.

3) Plate and enjoy!
