Recipe: Spinach & Potato Gratin
There's something kind of nice about a mid-week dinner that can be put together in 20 minutes and then placed in the oven while you feed & bathe the kids. My husband and I love tucking the twins in and then enjoying a grown-up meal together. There also might be a little wine involved. Tonight I made a Spinach & Potato Gratin with onions and some excellent cheese. I love Ina Garten and have adapted one of her succulent recipes to get the results below.
This is the beginning stages before I popped it into the oven. Step one - butter your skillet and start to create layers with your potato, onion and spinach.

Prep Time: 20 minutes Cook Time: 45 minutes Total Time: 65 minutes
Inspired by Ina Garten's Spinach Gratin recipe I have made a few alterations because of what we have on hand in our fridge. I switched out the heavy cream for 2% milk and halved the amount of Parmesan and added some aged cheddar in its place. I also added 2 medium sliced potatoes.
