Recipe: Grapefruit Tart

I wanted to see if I could bake a Grapefruit Tart inspired by a recent episode of the Great Canadian Baking Show. I love the way the grapefruit curd mixes with the crumbled roasted pistachios and sweet flaky crust. I ended up mixing two recipes from the Lark & Linen blog and Martha Stewart. The results made my family smile and it was a nice dessert to finish off the work week.

I loved rolling out this pliable dough. I popped it in the freezer for 30 minutes and then blind baked it for 30 minutes.

Since I followed the Martha Stewart recipe, it was worth it to juice the grapefruits by hand to get that fresh tart flavour.

After letting the curd set, I piped some whipped cream and sprinkled some roasted pistachios around the edges.
